Restore OOB functionality for Agent Mobile App?

Hi Community,
We are looking to roll out the Agent mobile app for our users. We had previously been using the Agent app for a small group of users since 2019. We want to have the app as close to OOB as possible. Currently when comparing our instance's System Mobile tables, some tables like "Screens" have ~200 more rows than my PDI. There are also some custom fields we would like to get rid of. What is the most efficient way of restoring our Mobile Agent to OOB? I have been manually deactivating old fields while comparing to my PDI but considering there are many tables, this seems tedious.
