There is one major difference between created date/time and start date/time in Flow Designer.
Created Date/Time shows the flow execution's created time when the execution created in the system. It changes according to logged in user time zone.
Start Date/Time shows the date/time in flow execution start time according to the Flow timezone so if it is created in EST Timezone it will show time in EST Timezone. It is different from created date of execution as it doesn't change with the user timezone. It sticks with Flow Timezone.
