Starting fresh with EntraID and User tables

I work for an organisation that has sat on an unused instance of ServiceNow for a couple of years and now we are moving forward again with implementation. What this has meant is the old user table is full of very old user data. When I started a few months ago I decided to configure this with the EntraID connector and got it working using an integration account and a X509 cert.
While this was working fine, I did notice that if i removed a known user from the user table, it would not reappear on the next EntraID synch, just would not reappear, no errors or anything on either end. Still exists in AD, but not on the ServiceNow side.
Given this and some other issues, and the state of the user table I've decided it would be better to just start again, and re-provision everything from EntraID, however my fear is if I delete all entries on the sys_user table that they will not re-appear with an EntraID synch. How should I go about achieving this properly (i.e. starting afresh) ?

You need to ensure that you have the right coalesce on the correct field while transforming the data, you don't need to worry later.
