Hi
I have the following variables from my catalog item on RITM. However, one of the variables (referencing the user table) is not populating
Any suggestions as to what I've missed?

just saw your recent update as well
Can you check variable on catalog item if anything unusual as well as if there is any UI policy action on this field with "Clear Value" check box checked or any catalog client script which is on change?

is it Name?
Check if you have an onload client script which is not marked for Applies on Requested Item.

The issue was indeed the "Clear Value" check box in the UI Policy.
