Check the "holiday schedule" on your Appointment Booking Service Configuration. If you happen to have the "holiday schedule" as the same one defined for in your configuration, then this is the issue. You are using the same scheduled for service and for holidays. Thus, the Select Appointment popup screen will show "No Appointments".
Empty the holiday schedule, OR, create a proper schedule with holidays and populated it on the Appointment Booking Service Configuration.

Common causes and some things that you can check.
- Check your appointment configuration setup. Is the configuration record set to active?
- Check the " applies to" condition does it match the record type work order, case? Is "allow booking" checked and configured?
- Verify eligible resources and shifts
- Check service territories
Make sure the Work Order or Case has a Service Territory field populated.
Field resources must be assigned to the same territory.(I made this error) it took a bit to figure it out but the docs helped.
Validate dispatcher workspace settings
If you are using the dispatcher console or workspace to simulate appointments, make sure:
The filters are not restricting appointments.
The dispatcher view is refreshed.
