I am having an Assessment where multiple Mandatory and Non-mandatory Questions are present. When I try to Save the Assessment without answering all the Mandatory questions it is throwing an error as below:
As per my understanding we cant's save the Assessment without answering all the Mandatory fields but if you know a way to Save the Assessment without answering all the Mandatory questions, please provide an answer.

There may also be a case for some user education. The user can see a preview of what will be needed
unfortunately it doe not show if the question will be mandatory, as the logic may depend on responses of previous questions.
for a customer with 100+ questions, many of them mandatory, we went with the OOTB solution of adding a few questions to a category and paginate by category. This provided the autosave in Workspace, per page. You are able to exit and return to where you left off.
