Policy Exception OOTB Flow

I have a requirement to change approval mechanism for Policy Exception in which the first approval will be triggered to requester manager and so on. Also approval should be triggered to specified users when approving user clicks on "Request Compliance Review" and "Request Additional Approval" button.

 

Is it recommended to to follow the different process as it needs modification in flows and UI Action. What can be the business impact for this?

remember if you update OOB components then you will miss new features when platform is upgraded to latest release.

Also recommended to avoid updating the OOB one
