What is the difference between data certification and the attestation processes? Is there a process to validate asset record data also?

Yes. Data Certification can be used to certify any type of Data in ServiceNow. So not only CI, you can use it to certify asset records.
Certification is actually verifying and validating the data on a regular interval, while attestations are usually used in Compliance.

Normally Data Certification is used on CMDB Classes/ for Relationship/CSDM related classes. Since Asset Management mostly deals with Financial information, we do have various OOTB automated workflows to manage the trustworthy data on Assets. So I think its better to use these workflows to certify/making as trustworthy Assets instead of using Data Certification.
For more information, Look into the
- Hardware Asset Dashboard
- Hardware Asset Workspace

The use case here is for EOL data on a model. Would want a data certification task sent to the model owner to verify the EOL information. Would that work for this use case?
