can variables be used to trigger or use them in workflows

I have variables on a record producer, I am trying to see if I have to create fields on the table in order to use them in the work flow or reports. This is a choice list with 80 values so wondering what would be a best approach to handle this.

Why you want to create fields in custom table instead of variables?

I have variables on record producers but do they need to be mapped to custom fields so that we can use in workflow or for generating reports
