Difference between order guide to catalog item
An order guide is a bundle of catalog items grouped together which ultimately generates a single request and several requested items. A classic example is usage of an order guide for onboarding of a new hire where several separate catalog items like Windows PC, Mailbox, Business card etc. can be grouped together in form of an order guide and ordered during the onboarding of the new hire.
A catalog item on the other side usually represents a product or a service which can be ordered via the Service Catalog.
Difference between record producers to catalog item.
A catalog item is a product or a service which can be ordered by an employee from the Service Catalog. When ordered a catalog item generates a request and several requested items.
A record producer on the other side is a form which generates Task based records for e.g. an incident, an HR Case, a CSM case etc.
