Hello Everyone,
I managed to customize the email client when emailing from an incident however I'm trying to find the configuration to customize the SCTASK email client to match the banner and information.
If someone can guide me, i would be very grateful

You need to create it yourself, since there is none available OOB. You can do an insert & stay on the incident one you created and work it from there.
Do realize that end users don't have access to sc_task. So emailing them from there could cause weird issues of replies not being applied to the sc_task because of 'no access'.
