Patterns are what populates the Service Mappig maps. Patterns are used to identify applications, as well as find properties on the application and connection to other applications. For instance, there is a pattern for Tomcat to identify Tomcat applications. In the pattern there is a connection to find WAR files, which then is another pattern.
There are a lot of good videos on patterns and Service Mapping and descriptions on docs. Some of them are:
Service Mapping Part 1 | The Basics: https://www.youtube.com/watch?v=tgkWE8z3mxM
Service Mapping Part 2 | Troubleshooting: https://www.youtube.com/watch?v=P8wW9qI-4sE&t=102s
Service Mapping Part 3 | Advanced features: https://www.youtube.com/watch?v=IhnTl_PBeeU
Example of creating an application pattern: https://docs.servicenow.com/bundle/kingston-it-operations-management/page/product/discovery/concept/c-UsingPatternsForHorizontalDiscovery.html
There is also a lot of training on https://servicenow.sabacloud.com which can give you the fundamentals. I encourage you to look there first.

For some basics of how CIs are populated by patterns, I wrote a quick howto to understand some of the operations.
My guide can be found here: https://empdsmith2.service-now.com/kb_view.do?sysparm_article=KB-PATTERNS.
