Adding additional assigne to Catalog Task

Hello,
We have a catalog item where users can request help to set up AV equipment in a teaching room. We have added the "Additional assignee list" field to the catalog task that is part of the workflow (90% of the time these types of requests go to a dedicated AV-Support Group but sometimes the task has to be assigned to someone outside of the team).
With this in mind is there a way of triggering a notification to anyone who has been added to the additional assignee list? Is there a way of doing this? I suspect I can add something to the advanced script section or are there alternative solutions?

I'm trying to convince my team that adding additional assignees (or adding and subtracting additional assignees back and forth to track tiny bits of oversight time) will negatively impact our SLA management. But I can't find documentation or an expert to prove it. Can you help?
