When do Catalog Request Item Metrics get updated and by which job? Can we run it on demand? Thanks

Hello,
There are no OOB "Catalog Request Item Metrics"....so maybe you're copying and pasting that from another post or something you've read, but by default...there are none. You can create them: https://docs.servicenow.com/bundle/geneva-performance-analytics-and-reporting/page/use/advanced_repo...
Once you create a metric definition...it's "ran" as an instance each time the definition is met. Usually when a record is inserted or updated on a specific table. You can "run it on demand"....meaning update old records, but I don't understand fully what you're asking.
