Hello,
I am setting up new Catalog Item that allows users to request software to be checked by Infosec staff so that they can check on privacy settings and so on. I have some varibales/questions that are visible to the user and some that need to be on visible to the Infosec member of staff. How do I acheive this via a Catalog UI Policy?

Sorry but could you please share screenshots of what you configured in your instance on how can you add role check in condition of UI policy.
The link you shared doesn't have screenshots either.
I was not able to add that i.e. script anywhere here

Usually developers prefer to use UI policy when there is validation/condition which is simple.
If any script is involved, it's better to use client script.
