we want to know what privileges do the discovery credentials for windows and linux server needs to have.
do we need domain admin or something less that that can work for the exploration phase?
we prefer not to grant domain admin privileges. if we don't grant it, will there be any access issues?

Generally speaking to avoid hassle you should stick to the requirements that service now hands out, as it will allow your to set up to run the oob discovery.
Other than that you will have to try around alot. Theoreticlly speaking you can go through the probes on the servicenow instances and check what commands they are running and which commands need what access. You can also look into that here (link for ssh): https://docs.servicenow.com/bundle/london-it-operations-management/page/product/discovery/reference/...
tl:dr: if you can stick to the servicenow docs. Otherwise, check the commands of the probes and what rights are needed.
