Display Catalog Item Form variables in My Requests Widget

On my Service Portal Index page, I have included a "My Requests" widget which will display the user's requests (where the Requested_For is the user). This is based upon a Simple List, which finds Active requests for the user, and shows the REQ number, updates and short description. I've searched through all of the Secondary fields, but I cannot find a Variables secondary field which will show all of the fields modified by the user in the submission of the request. I definitely understand that there is a default limit on display fields, which is fine. Mostly, this will be used to help further identify requests for the user.
Use case:
As a user, I need to know which request corresponds with which CI, Environment, etc. at a glance on the Service Portal homepage. As a user, I often open multiple records of the same request type, but for different Configuration Items and environments.

Good thought on that one. All of my variables are visible elsewhere, so that's not it, however.

Once again, an excellent thing to check. I've looked at the few Catalog Items where this would apply, and they are all set to display. The rest of them don't have any UI Policies or Scripts. I think this might have more to do with what's available through the Page Editor or Widget Editor.
