Getting Change Management Set Up, Assess and Approvers

I'm getting started setting up Change Management and have a couple of questions (assuming a normal type change).

Am I correct that the assess stage is where the business and technical sides complete their work and documentation and that the approval in that stage comes from that part of the organization?

If I am correct, how do I set up so that the correct set of approvers get notified for a given change?

I've done further research and find that the approvers for assess come from the Assignment Group.

In our organization, while in the Assess stage, the identified Change Manager is the one who receives the notification and must approve the change. Change Manager is a required field at submission of a new Change Request. If the Change Manager on the record is also the person who entered the Change Request our workflow automatically approves the request and moves the record to the Authorize state for the associated CAB member to complete the approval. All of this is done via the workflow.

That does help.   I assume that the change manager is the Assigned To on the change form.

Actually, the Change Manager is a custom field that we set up. But, calling the custom field in the workflow or in the notifications is no different than calling an OOTB field.
