Is there any way to increase the length for a choice list ? Right now it is taking only till 40 characters.

increasing the max length won't be good user experience as client might come with some choice value which is 80/100 characters and it won't be looking good on UI.
So I won't recommend increasing that although this is possible as per comment from Anirudh.
You should inform your business team about the User Experience.

No worries.
I was just mentioning this point that updating OOB dictionary fields is not best practice unless it is very much required.
