Priority label change

Is it good practice to modify priority labels , values or including new priority values since its OOB? 

Is there any impact on the existing process if we change the priority label?

Its not good practice to change directly OOB fields name , it will impact for all tables including task

so u can change by using dictionary override or create new field.
