Hi All,
I can see in the documentation that service catalog variables are audited for changes made in the RITM or service catalog task.
I have verified in my instance that the property is set correctly
but when I create a request and then go and update the variables and save the RITM record I'm not finding any indication of the change.
Any help would be appreciated

Ideally variables are not allowed to be updated on RITM because of the Out of the box business rule even for admins.
You should not allow variables to be updated on RITM as those indicate what the end-user has submitted as request from catalog and ideally should not be altered.
Variables can be updated from catalog task as per your process by agents working on the catalog tasks.
For SC Task you can check in similar manner
Right Click -> History -> Calendar

In the similar way as you audit the incident by going into additional actions->history, you can do the same thing for your requirement in the particular record.
