We grant permissions to our knowledge base to a number of different groups. However, I'd like only one particular group to have access to a couple of articles and restrict other groups from seeing them. Is that possible? (Creating a separate knowledge base for those few articles is not an option.)

Yes, this is very easy to do. Simply create a group for these people. Then, add that group under the Can Read criteria to individual articles. Super easy. (We do this regularly to restrict articles to specific groups, such as HR agents or managers.)

Creating User Criteria records require the user_criteria_admin role as outlined in the product documentation: https://docs.servicenow.com/bundle/utah-servicenow-platform/page/product/knowledge-management/task/c...
This role is part of the roles granted by the knowledge_manager role, but not granted by the knowledge_admin role.
