I would like to edit the existing buttons shown in the attached screen shot ( in red box) in the Now Assist Panel and be able to add new buttons with new skills.
Please shed some light with some articles, videos links etc. Much appreciate it.

For creating new button , you have to create a llm based VA topic and call your custom skill within va topic , once the topic is published you have to promote the topic so that it can appear in nap , check this doc link : https://www.servicenow.com/docs/r/washingtondc/servicenow-platform/virtual-agent/promote-demote-va-t...

Ahoy @SonnyY,
the buttons in NAP are actually the AI skills that have been enabled for NAP (there's "in product" or "NAP") and you toggle on/off according to your preferences.
If you want to add a new AI skill (button if you will), what it should do or what exactly are you trying to achieve?
Please share some context.
To get there new skills > go to Now Assist admin and review what's available (not all skills can be added to the NAP) and eventually create custom skills in Now Assist Skill Kit (NASK) or you will might need to activate more plugins /E.g. Now Assist for HR, CSM, ... to get there more options.
But again, if you say you want to add there "some more", what exactly is expected? Do you have any plan?
EDIT: regarding the learning resources, check this: [GF#8] Getting started with Now Assist
