We have a huge number of catalog items which are Non-conversational. What options do we have ?

We have a huge number of catalog items which are Non-conversational, (90% of them)
Questions:
1 - What is the consequence of having such huge number of non-conversational items
2 - What is alternative to better leverage 'Conversational experience' given that we have huge number of non-conversational items.
PS - We cannot make changes/modifications to the catalog items just because to make it conversational.
