I would like to get to how many requests are approved or rejected by each approver who are part of approval assignment group.

For sure. Create a report based on the sysapproval_approver and at in below condition:
Only reason that I have created on this month in the condition, is due to limit the amount of records.

Good use case for a pivot table (multi level pivot to be precise)
In this case I compared the Approval State against the Approver and the Task Type of what the thing was approving for.
