I'm trying to create a Dashboard with some filters and a list view. I'm wondering if it is possible to create a list in Platform Analytics/Advanced Analytics that would give you the capability to use list editor so that you or whomever is using the list can click on and select and adjust values where needed. like you can below.

According to platform analytics/Advanced analytics - what do you mean by this? There is nothing called Advanced analytics and platform analytics naming is only used from Washington release. If you refer to either a report created through the report designer and populated to a dashboard, or a listview created through analytics workspace, then yes - then it is possible to adjust value.
