I need to know how to run a comprehensive report that will tell me how many times the Catalog Items in our Service Catalog have been used. The goal is to identify the ones that are not being used so we can evaluate and improve them.

Hi, Use Pivot table report type and use the report condition as created on last 2 years.
Define the Row as 'Item' field and it will display the count of request item will be displayed. You can decide the least usage of the catalog items.

If anyone is still looking for this - it's a canned report available in the Service Catalogue Overview area (xanadu) - handy request item usage tab. It's all there.
