What is the relationship between an asset's Model Category and the corresponding CI's class? Does the Model Category determine the Class? If the Model Category is changed on the asset or class change on the CI do those actions effect each other?

The Model Category determines the asset and CI classes. If creating an asset first, the model category creates the corresponding CI based on the CI classes defined in the Model Category record.
Go Model Categories to see the model category records set up in your instance and to see the Asset and CI class values for each of those records.
Once the asset is created, the model category cannot be changed.
