ServiceNow recently provided us a solution for records being updated unexpectedly.
The solution was found in bin logs according to solution proposed.
Here is the update in the bin logs:

Base Table: The table we were experiencing problems with
Time Stamp: Date & Time (timezone)
Are bin logs searchable, or is help from ServiceNow always required?
