Why are the item variables read-only on the Requested Item (RITM) form, while the same variables are editable within the ServiceNow Workspace? What technical or configuration factors cause this difference in behaviour between the two contexts?

in native there must be some client script which is making those read-only.
That client script seems to be running only for Default view and not Workspace view.
Did you check that?

Hi, @Giuseppe4 ,
Check if there is any client script on that table and which are running on UI type as 'desktop'(except 'all') which runs only on native view not on workspace. When you set the UI type 'All' that will run on workspace too.
I hope you have observed on same record.
Thanks,
Bhimashankar H

Hi @Giuseppe4
Your script might be running only in Desktop View. You have to set your client scripts/ui policy to run in the workspace as well.
