Is there any way to restrict users from seeing this value? So ideally only vendor managers can see it and not others

Try to create an ACL and restrict this to specific groups only.

This value get stored in a field, so you need to put ACL on this field in that table.

You could create a variant of this page without the field on it and give the original page an audience of vendor managers.
