FLOW designer not fetching catalog variables data/value from Get Catalog Variable action. due to which i am unable to set the dynamic approval and task assignment.

I am new here, but this might help. Get Catalog Variables returns comma separated string values. If you are expecting to pass an array of values using this action, you might have to do one more step:
