How Delivery Date/Time is calculated if you are using Flow Designer?

We are testing to recreate our catalog items using Flow Designer. However, we can't get the delivery date to work based on our expectations. As we know before, delivery date/time is calculated based on workflow, execution plan. How is it working now using Flow Designer? We can see it can be set on the Stage Duration, how ever this is not sustainable since we have catalog items with multiple tasks in them, and each task should have different delivery time.
END GOAL
Show delivery date based on total duration of all catalog tasks combined.

Seems like Flow Designer is currently very limited in terms of setting the delivery date of a request, you can't even select a scheduleto exclude weekends on estimated delivery time versus the classic workflow editor.
