I have installed the Managed Documents Plug-in and now want to remove this plug-in from the instance.

How do you remove a plug-in that is installed?

Hi, 

You can't uninstall a plugin on an instance once it's installed. 

The only way to remove it from a sub-production instance is to clone your production instance over it.

As Mike replied and as it written in the following Now Support page, it's not possible to uninstall, disabled or deactivated a plugin.
