I'd advise to talk to your ServiceNow Account rep on this. They know you better than we do and also what you are running.
Unfortunately, the documentation about self hosting is only available for self hosting customers. But knowing ServiceNow, they will have the questions you are asking documented and can share that with you.
I never did this migration myself, so no practical experience. I have worked for self hosted customers and I must say that I prefer the ServiceNow hosted ones. They just take care of a lot that you don't have to worry about.
Please mark any helpful or correct solutions as such. That helps others find their solutions.

Hi @Siriwut_p,
There are a few restrictions on self-hosted instances, and the operation model doesn't fit standard procedures for similar applications. You can also get a sovereign cloud option from different ServiceNow partners.
Migration is done by a standard procedure documented in the KBA from ServiceNow. Basically, you will export your database and load it to the new target instance.
Hope this help!
