e-signature - not working with SSO

We've installed and configured the e-signature plugin. It works with local accounts, but have not been able to get it to work with an SSO session.
Checked the default Identity Provider record configuration, and following the documentation confirmed the settings.

At the end of the document linked above, it specifies to generate new meta data for the Identity Provider (SAML). I reached out to our SecOps team to apply the update for our test environment, but it still doesn't work.
Any suggestions on what to check?
