Could you explain me how Servicenow do to swich between "Complete" and "Deffered" in the process flow ?

That is handled by a business rule called "dmn_demand_ProcessFlowList"
HI,
OOTB that reject state on the Process flow isn't handled from the business rule. That flow diagram is handled from the "Process Flow" table. Someone turned on the Reject state, OOTB it is inactive. You will have to deactivate it from the "Process Flow" table
