Since email client is not enabled by default OOTB for Demand and Project, I'm hoping the ServiceNow Community brain trust might be willing to share any information as to why this is the case, what is the reasoning behind this and also what are the potential risks, downsides, things to watch out for if it is enabled. We are at UNC Health considering enabling this but want to do so with a clear understanding. Thank you.

Hi Wayne, I don't think there is any particular reason it's just not enabled OOTB.
Easy done though by adding the email_client dictionary attribute: https://docs.servicenow.com/bundle/tokyo-servicenow-platform/page/administer/notification/task/enabl...
The only thing to watch out for is that if you are using NDA projects then you may want to disable the email client on those just to lower the risk of data loss prevention. The Email Client icon is also auto disabled OOTB if a user does not have write access to the table.
There is a solution to hiding it on role here:
The other option is using MS Teams instead of email for Projects. That option has been there since Tokyo and most customers don't know about it: https://docs.servicenow.com/bundle/washingtondc-it-business-management/page/product/ppm-collab/task/...
