Does anyone have information on retention options for ITSM tickets or CSM Cases on the ServiceNow Support portal Knowledge Base? Is there config options to automatically archive or delete cases/incidents?

This KB provides all the information : Data Retention, Rotation, Cleanup and Instance Size
For you other question not all OOB tables are configured with data retention and table rotation,
Customers enable it based on their requirement.
