I want to modify Type section in new interaction in service operations workspace as i want to add open of "Walk Up" along with other options which are there such as chat , phone etc

This is just a choice in Sys_choice. You can navigate to sys_choice.list and filter on the interaction table to see the choices for "Type". I would be careful adding choices and understanding the OOTB choices which also include phone and walkup, and maybe others in the future as you add additional modules.
