Dear all,
I wonder the difference between AI search (fallback) and Contextual search (fallback)? I found them in the topic list, but I don't know when to use which one and how to use AI search (fallback)?

The purpose of AI Search Fallback topic is to let VA know, what to do in case AI Search did not return a result. You can clone it and customize it to your requirements.

In other words, I cannot use topic AI search defined by servicenow

AI search is not available in PDI, so you cannot use it.
Go with Contextual search(Fallback).

ok, did you enabled the glide.ais.genius_result.enabled property?
AIS Genius results uses a NLU Model. Can you also check if your Default AI Search model is trained and published.
Filter Navigator > NLU Workbench > search for AI Search
Train and Publish.
