good afternoon :
there is a requirement that my company wants to implement but I'm not sure how to start
they asked me to populate a graphical way to track the records any time an stage changes for an incident, i need to know where to start,and how to,the ss shows what its supposed to see incident form and the stages should be the ticket´s status

That's weird, because an incident can skip stages and also go back (in progress, awaiting info, in progress, etc.). A stage flow should just show you progress through the stages. It sounds like they don't want a stage flow like with requests, but a different way of looking at the states.
First: ask them why. Because stage fields also mean longer loading time on lists. What is the adding of this field going to solve for them?
OOB, there is no stage field, so you need to create it (type = workflow). You will need to add the choices and create a flow or br on every single state change to match state to stage (again, more resources needed on every change).
It doesn't make sense to have it, but you can create it. As I said: challenge the requirement, but if they really need it for some reason, you can create it.
