I would like to remove the timestamp and user name from the activity log in Incident table. Could someone please help me with this?

what's your actual business requirement?
You can always inform your customer that it's a OOTB platform behavior and train the users.

It's not possible.
The primary purpose of the activity log is to track who made updates and when they were made.
