When I create a "Container End" variable, the variable is auto named to something like "formatter9", etc.
Is there a way to create a meaningful variable name rather than end up with an auto named variable of type Container End?

Nope, you need to do this from the List Layout view as shown in my screen shot attached above. Screenshot which you have attached is of the form view.

Hi Glenn,
Change it to Container Start and add the variable name, then change it back to container end. Thats how I do it.
Or you can disable the current UI policy for Container End to display the name.

Geez, that sounded brilliant, so I got my hopes up.
However, that doesn't work for me. As soon as I select "Container End" the name field vanishes and it retains the "formatter9" variable name.

Hi,
Navigate to the "Variables" module under Service Catalog and search for your Variable as Name = ''. Now Double Click on your Container End Variable in the Name Column and Type in the Text you want to be Updated as shown below:
Result:
