Just also simulated this. Especially the last bit curious if that's your case.
So for example, you could have a choice with label "SAP" and value "sap". Though if you would have a UI Message [sys_ui_message table] with a record that has key and message "sap", this will overwrite your label from your choice. This also happens even if your label is first letter uppercase and your UI Message key is all lowercase. Then still, the UI Message will overwrite your label from your choice.
If my answer helped you in any way, please then mark it as helpful.

Hi Mark,
yes there was a record for 'sap' as I have added screenshot.
So I couldn't really understood what should I change in this.. can you advise?
For now I have just modified choice label as "SAP Account" as only SAP was coming in as 'sap'.

You could change the "sap" UI Message record that you found. Simply change the Message to uppercase.
If there was not yet a UI Message, then it got created automatically when you added the choice first time in lowercase. To confirm for yourself, check the created by/created date and if that UI Message is in your same update set for example.
Only side note: be sure that this UI Message was created for your Virtual Agent topic. It could also be that this UI Message already existed for some months/years in your system and is also used for other purposes. While changing this one specific to uppercase sounds very logical, be aware of this if you encountering something like this for similar UI Messages.
