Creating email action - specify certain element of description

Hi Community, 

I am having issues with a flow that will generate an automated email to the RG. 

the flow works if the "Description" field is populated with no complications however if the incident is generated via an inbound email action, the description field puts all the information into the description section. this includes Signatures, logos etc. This is causing a problem trying to generate the email. 

Can i please have some assistance to show me how i can get the email builder (action) to pick out only part of the description
