How to add changes to an update set after the changes have already been made

I know aric.wilber knows how to do this, I was doing work in an instance and my PM just now said that he wants me to put it in an update set...How do I do that now that I've already spent all day adding items into Service Catalog? Also, that is all I've been doing--entering items and bundles into SC. Do I have to do an update set or can we just do something simpler to get all the data when we merge to PROD?

Thank you so much Aric for taking the time to reply. I really appreciate it. While I couldn't find the way to open that in a new tab (prior to your reply), I tried finding an alternative approach, and would like to know your thoughts on this.
- Go to Local update sets table and create a new update set
- Go to Customer Updates (sys_update_xml.list) table and filter all the changes made by my team, carefully examining each change is the correct one (using the filters you suggested, time, updated by, type etc.
- Change the Update Set column in the same Customer Updates table to the newly created update set (ctrl + selecting all 50 in one page)
- Review the changes and switch to new update set, make it current and continue development.
