Yes, I got it fixed. You need to call Hi support and they change it from
their side....it's weird. Did you recently upgrade?

Ah ok cool, i've raised a case with HI, hopefully they'll be able to sort it out for me as well, thanks for the tip.
We've only just gone live so this is just one of a host of things on my rapidly growing to-do list!

Hi David,
I know!! Just wanted to let you know that getting it fixed from Hi support
will only address the issue for any new approval. If your instance is
anything like ours then hundreds of approval emails go out each day (for
change, release, REQ etc.) and they will all have incorrect email to link
in them. Users will keep approving using these faulty emails and continue
to raise incidents. I had to re-trigger all the approval email between the
day we went live to the day the issue got fixed so that they use newly
triggered emails for approval. Hopefully I have not added another thing to
your to-do list

Quick update on this for any other interested parties:
HI weren't able to change the mailto address for the approve/reject links on the notification for me, they cited something about legal positions and them being liable for any failures that may occur if we move the address from their highly available one to our less available one (Office 365 so not really that unavailable).
Anyway, the solution they have proposed is to change the default send to address of the instance.
To achieve this you add a property to sys_properties_list.do called "glide.email.mail_to" with the "value" set to: youremail@yourdomain.com, this will make this the default address for all notifications and requests.
I'm still testing this but it seems to be working ok so far, obviously only applicable if you want to change the address system-wide, if you're just looking to change where the approval mailto's go then i, and apparently HI, cannot help
