Can I change the Fields that are shown when I try open new project in project workspace ?
it comes from this view of project table "New Project"

Go to pm_project table from Application Navigator and open a record. Go to Configure -> Form Layout
From the View name -> Select 'New Project'. Add the fields you want to be displayed in Workspace when New Project is selected and save the record
For example, I added few additional fields for testing
