Refresh portal fields on change of 'Requested For'

I have a variable set which populates fields like 'Email Address', Phone number' and 'Location' by using lines like  

'javascript:gs.getUser().getEmail();' in the 'Default Value' fields of the variable

When the 'Requested For' is changed on the item, these values do not update to reflect the changed users details . What would be the best way of either getting them to update or remove the previous details?

Not sure, but try use Auto Populate feature and populate the rest 3 variable based on same. and it will do work for you
